- 1 tablespoon lemon juice (15ml)

- 1 cup all-purpose flour (125g)
- 1 teaspoon baking powder
- ½ teaspoon salt

Instructions
- Preheat oven to 375°F (190°C).
- If peaches are firm, peel them by boiling for 30 seconds and plunging into ice water. Slice into ½-inch wedges and remove pits. Toss with lemon juice.
- In a large bowl, combine sliced peaches and blackberries. Sprinkle with ½ cup sugar, cornstarch, and ½ teaspoon cinnamon. Gently toss to coat evenly.
- Pour the fruit mixture into a 9×9 inch baking dish and spread evenly.
- In a medium bowl, whisk together 1 cup flour, baking powder, salt, ½ cup sugar, and 1 teaspoon cinnamon.
- Make a well in the center and pour in melted butter and milk. Stir gently until just combined; lumps are okay.
- Spoon the topping in clumps over the fruit mixture. Do not spread flat.
- Bake for 40-45 minutes until topping is golden brown and juices are bubbling vigorously. Tent with foil if browning too quickly.
- Let cool for at least 15 minutes to allow juices to thicken.
- Serve warm with vanilla ice cream.
Notes
If using frozen fruit, do not thaw. Add 5-10 minutes to baking time. Let the cobbler cool for 15 minutes before serving to ensure the filling sets properly. For a gluten-free version, swap all-purpose flour for a 1:1 gluten-free blend. For dairy-free/vegan, use coconut oil and almond/oat milk.
