  • 3 cups cooked chicken, diced (rotisserie or grilled)
  • 2 cups frozen broccoli florets
  • 1 cup chicken broth (low-sodium)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1.5 cups sharp cheddar cheese, shredded
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • ¼ cup panko breadcrumbs (optional topping)
  • ½ cup extra shredded cheddar cheese (optional topping)
  • 1 tablespoon butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cook the white rice according to package directions until tender, then let it cool slightly.
  3. If using frozen broccoli, thaw and squeeze out excess moisture with paper towels. If using fresh, blanch for 2-3 minutes and chop into florets.
  4. In a large mixing bowl, combine the cooked rice, diced chicken, broccoli, cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Sprinkle the shredded cheddar cheese over the top. If using, toss panko breadcrumbs with melted butter and sprinkle over the cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden, and edges are slightly crispy.
  8. Let rest for 5-10 minutes before serving.

Notes

Squeeze moisture from frozen broccoli to prevent a watery casserole. Shred your own cheese for better melting. Use leftover rice for best texture. This dish does not freeze well due to dairy and rice texture changes.
