  • 1 cup (170g) dark or semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for thinning chocolate)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Preheat oven to 325°F (165°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, combine shredded coconut, sugar, salt, vanilla extract, and almond extract. Stir until evenly distributed.
  3. Add egg whites to the coconut mixture. Gently fold with a silicone spatula until no dry coconut remains and the mixture is uniform. Do not overmix.
  4. Using a cookie scoop or two spoons, drop mounds of mixture onto prepared baking sheets, leaving 2 inches between each. Press tops down gently to flatten slightly.
  5. Bake for 15-18 minutes until edges are golden brown and caramelized, but centers still look slightly soft. Rotate sheets halfway through.
  6. Let macaroons cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
