- 1/4 cup cinnamon applesauce or apple butter
- 1/4 cup milk (oat, almond, dairy, or soy)
- 1 large egg
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1/2 teaspoon vanilla extract
- 1 tablespoon apple butter (for swirling)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 4-6 oz ramekin with non-stick spray or butter.
- In a small bowl, combine rolled oats, brown sugar, cinnamon, baking powder, and salt. Stir to distribute evenly.
- In a separate bowl or mug, whisk together the egg, milk, applesauce (or apple butter), and vanilla until smooth.
- Pour the wet mixture over the dry ingredients and stir gently until coated. Let the mixture sit for 2 minutes to allow oats to absorb liquid.
- Drop spoonfuls of apple butter on top of the oat mixture and gently swirl with a knife or toothpick to create ribbons.
- Place the ramekin on a baking sheet and bake for 20-25 minutes, until the top is golden brown and the center is set.
- Let cool in the ramekin for 5 minutes before serving.
Notes
Do not use quick oats or steel-cut oats as they alter the texture. Letting the batter rest for 2 minutes before baking is crucial to prevent a soggy bottom. If using thin applesauce instead of apple butter, reduce milk by 1 tablespoon. Can be frozen for up to 3 months.
