Description
These creamy Boursin garlic whipped potatoes are an easy, stress-free side dish that requires only five ingredients. They are richer and smoother than standard mashed potatoes, making them perfect for holidays and dinner parties.
Ingredients
- 3 pounds Russet potatoes, peeled and cut into 1.5–2 inch chunks
- 8 oz (1 package) Garlic and Fine Herbs Boursin cheese
- ½ cup (113g) unsalted butter, cut into cubes
- ½ cup (120ml) heavy cream or sour cream, warmed
- 2 tablespoons fresh chives, chopped
- ½ teaspoon white pepper (optional)
- Salt to taste
- 1 tablespoon salt (for boiling water)
Instructions
- Peel potatoes and cut into uniform 1.5 to 2-inch chunks. Place in a large pot and cover with cold water by an inch. Add 1 tablespoon salt.
- Bring water to a boil, then reduce to a simmer. Cook for 15-20 minutes until potatoes are fork-tender. Drain in a colander and let steam dry for a minute to remove excess moisture.
- Rice the hot potatoes into a large mixing bowl using a potato ricer, or beat with an electric hand mixer on medium speed for 30-60 seconds until smooth.
- Add the softened butter cubes and the entire block of Boursin cheese to the hot potatoes. Mix until the cheese is fully melted and incorporated.
- Pour in the warm heavy cream (or sour cream). Add white pepper and taste for salt. Whip on medium speed for 1-2 minutes until the mixture is smooth, airy, and glossy.
- Transfer to a serving bowl, smooth the top, and garnish with fresh chives and a crack of black pepper. Serve immediately.
Notes
Use Russet potatoes for the fluffiest texture. Do not skip the step of letting the potatoes steam dry after draining, as wet potatoes result in runny whipped potatoes. Warm the cream and butter before adding to prevent the potatoes from seizing. Boursin cheese is essential for the flavor and texture; do not substitute with plain cream cheese. These can be kept warm in a slow cooker for hours.
