  • 1 tablespoon Italian seasoning (divided)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (divided)
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh baby spinach
  • Fresh basil for garnish (optional)

Instructions

  1. Pat chicken breasts dry and pound to an even 1/2-inch thickness. Season both sides generously with salt, pepper, garlic powder, and half of the Italian seasoning.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
  3. Reduce heat to medium. Add remaining 1 tablespoon olive oil to the pan. Sauté chopped sun-dried tomatoes for 1 minute, then add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1-2 minutes until slightly reduced.
  5. Stir in heavy cream and remaining Italian seasoning. Simmer gently for 2-3 minutes until the sauce begins to thicken.
  6. Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Add fresh spinach and stir until just wilted.
  7. Slice chicken and return to the skillet, nestling it into the sauce. Spoon extra sauce over the top and garnish with fresh basil. Serve immediately.

Notes

Pound chicken evenly for consistent cooking. Use the oil from the sun-dried tomato jar for extra flavor. Remove pan from heat before adding cheese to prevent separation. This recipe is naturally gluten-free if you check labels on broth and tomatoes.
