A comforting, creamy white chicken chili made in a slow cooker with zero prep work. This easy one-pot meal uses frozen chicken, green chiles, and cream cheese for a rich, tangy flavor perfect for busy weeknights.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts (frozen or thawed)
- 32 oz chicken broth (low sodium)
- 2 cans (4 oz each) diced green chiles
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 packet (1 oz) taco seasoning
- Salt and pepper to taste
Instructions
- Roughly chop the chicken into 1-inch chunks if frozen, or shred if thawed.
- Add chicken, chicken broth, green chiles (with liquid), black beans, corn, cumin, garlic powder, onion powder, and taco seasoning to the slow cooker. Stir to combine.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
- Shred the chicken directly in the pot using two forks or chop into chunks.
- Turn slow cooker to HIGH. Add softened cream cheese, heavy cream, and shredded cheddar. Stir gently until cheeses are melted and incorporated (10-15 minutes).
- Taste and adjust seasoning with salt, pepper, or additional spices as needed.
- Serve hot with desired toppings like sour cream, cilantro, and extra cheese.
Notes
Do not thaw chicken; chop frozen breasts roughly for even cooking. Soften cream cheese beforehand to ensure smooth melting. Use low-sodium broth to control salt levels. If chili is too thin, cook uncovered on HIGH for 30 minutes or mash some beans. For a vegetarian version, substitute chicken with extra black beans and diced potatoes.
