  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 packet (1 oz) taco seasoning
  • Salt and pepper to taste

Instructions

  1. Roughly chop the chicken into 1-inch chunks if frozen, or shred if thawed.
  2. Add chicken, chicken broth, green chiles (with liquid), black beans, corn, cumin, garlic powder, onion powder, and taco seasoning to the slow cooker. Stir to combine.
  3. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  4. Shred the chicken directly in the pot using two forks or chop into chunks.
  5. Turn slow cooker to HIGH. Add softened cream cheese, heavy cream, and shredded cheddar. Stir gently until cheeses are melted and incorporated (10-15 minutes).

Notes

Do not thaw chicken; chop frozen breasts roughly for even cooking. Soften cream cheese beforehand to ensure smooth melting. Use low-sodium broth to control salt levels. If chili is too thin, cook uncovered on HIGH for 30 minutes or mash some beans. For a vegetarian version, substitute chicken with extra black beans and diced potatoes.
