Instructions
- Wash the zucchini and trim off the ends. Slice them into rounds about 1/8-inch thick.
- Lay the slices in a single layer on paper towels. Cover with more paper towels and press firmly to remove excess moisture. This step is crucial for crispiness.
- In a small bowl, toss the dried zucchini slices with olive oil and garlic powder until lightly coated.
- In another bowl, mix the panko breadcrumbs and grated parmesan cheese.
- Press each zucchini slice into the panko-parmesan mixture, coating both sides lightly.
- Preheat your air fryer to 375°F (190°C).
- Arrange the coated zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
- Lightly spray the tops with cooking spray or drizzle with a tiny bit more olive oil.
- Cook for 4 minutes, then flip the chips.
- Cook for another 4-6 minutes, checking frequently, until golden brown and crispy.
- Remove from air fryer and let cool for 2 minutes on a wire rack or paper towel to set the crunch.
- Season with a tiny pinch of salt if needed and serve warm.
