Instructions

  1. Wash the zucchini and trim off the ends. Slice them into rounds about 1/8-inch thick.
  2. Lay the slices in a single layer on paper towels. Cover with more paper towels and press firmly to remove excess moisture. This step is crucial for crispiness.
  3. In a small bowl, toss the dried zucchini slices with olive oil and garlic powder until lightly coated.
  4. In another bowl, mix the panko breadcrumbs and grated parmesan cheese.
  5. Press each zucchini slice into the panko-parmesan mixture, coating both sides lightly.
  6. Preheat your air fryer to 375°F (190°C).
  7. Arrange the coated zucchini slices in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
