  • 3 tablespoons (45ml) high-smoke point oil (avocado or refined olive oil)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon kosher salt (divided)
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 6 strips cooked bacon, crumbled
  • 3 stalks green onions, thinly sliced
  • 1/2 cup (120g) sour cream
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  2. Pat the warm potatoes dry with a towel to remove excess moisture.
  3. Sprinkle potatoes with garlic powder, onion powder, smoked paprika, and half the salt.
  4. Smash each potato flat to about 1/2-inch thickness using a rolling pin or glass.
  5. Thread the smashed potatoes onto skewers (stacking 2-3 per skewer is recommended).
  6. Brush the tops generously with oil and sprinkle with remaining salt.
  7. Air Fry: Preheat to 400°F (200°C). Cook skewers for 12-15 minutes, flipping halfway, until crispy.
  8. Oven: Preheat to 425°F (220°C). Bake on a parchment-lined sheet for 20-25 minutes, flipping halfway, until crispy.
  9. Remove from heat and immediately sprinkle with shredded cheddar cheese and crumbled bacon.
  10. If baking, return to oven for 2 minutes to melt cheese. If air frying, add toppings after cooking.
  11. Garnish with green onions and chives. Serve with sour cream for dipping.

For best results, ensure potatoes are dry before smashing to maximize crispiness. Use sharp cheddar rather than pre-shredded for better melting.
