Description
A budget-friendly, game-day appetizer featuring homemade crispy onion rings stacked into a tower and drizzled with a spicy, smoky chipotle aioli.

- 2 large yellow onions (about 300g each)
- 1 cup all-purpose flour (120g)
- 1 teaspoon granulated garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- 2 large eggs
- ½ cup milk or buttermilk (120ml)
- 2 tablespoons cornstarch
- Vegetable or canola oil (for frying)
- ½ cup mayonnaise (120g)
- 2–3 chipotle peppers in adobo sauce, minced
- 1–2 teaspoons adobo sauce
- 1 teaspoon lemon juice
- 1 small garlic clove, minced
- Pinch of salt
Instructions
- Mix mayonnaise, minced chipotle peppers, adobo sauce, lemon juice, minced garlic, and a pinch of salt in a small bowl until smooth. Cover and refrigerate.
- Peel onions and slice horizontally into ½ inch thick rings. Separate rings and soak in ice water for 10-15 minutes. Pat completely dry with paper towels.
- In a shallow bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, pepper, and cornstarch. In another bowl, whisk eggs and milk until smooth.
- Heat 2 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).
- Dip onion rings into the wet batter, letting excess drip off, then coat thoroughly in the dry flour mixture. Place on a plate.
- Fry rings in batches of 4-6 for 2-3 minutes per side until golden brown and crispy. Remove and place on a wire rack to drain. Sprinkle with a tiny pinch of salt.
- Stack fried rings on a large baking sheet or platter in a tower shape. Drizzle generously with chipotle aioli or serve on the side.
Notes
Keep oil temperature steady between batches to ensure crispiness. Soaking rings in ice water helps remove sulfur and improves texture. For extra crispiness, double dip the rings in batter and flour. Aioli can be made ahead and stored in the fridge for up to 3 days.
