Description
A fresh, crunchy, and kid-approved cucumber salad with a tangy dill dressing. This no-cook side dish is perfect for summer barbecues, potlucks, or a light lunch, and encourages children to help in the kitchen.
Ingredients
- 3 medium English cucumbers (about 2 pounds / 900g), sliced into half-moons
- 1/2 cup packed fresh dill (about 30g), chopped
- 1 small red onion (about 50g), thinly sliced
- 1/4 cup apple cider vinegar
- 2 tablespoons granulated sugar
- 2 tablespoons vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup ice water
Instructions
- Wash cucumbers thoroughly. If using English cucumbers, slice into 1/4-inch half-moons. If using regular cucumbers, peel and scoop out seeds before slicing.
- Thinly slice the red onion into half-moons or rings. If the onion is too strong, soak slices in cold water for 10 minutes, then drain and pat dry.
- In a small bowl or jar, whisk together apple cider vinegar, sugar, salt, pepper, and oil until sugar is mostly dissolved. Stir in ice water.
- Place sliced cucumbers and onions in a large mixing bowl. Pour the dressing over the vegetables.
- Toss everything together until vegetables are evenly coated.
- Refrigerate for at least 30 minutes (or up to 24 hours) to allow flavors to meld and cucumbers to crisp up. Stir again before serving.
Notes
For extra crunch, sprinkle sliced cucumbers with salt and let sit for 15 minutes, then drain excess liquid before adding dressing. This salad keeps in the fridge for up to 3 days. Do not freeze as cucumbers will become mushy. For a spicy variation, add red pepper flakes. For a lemon variation, swap vinegar for lemon juice and add zest.
