Description

A rich, smoky, and velvety tomato soup made by roasting fresh tomatoes, garlic, and onions on a grill or smoker. This easy, vegetarian dish is ready in under an hour and captures the essence of fall.


Ingredients

  • 34 pounds fresh Roma or heirloom tomatoes
  • 68 cloves garlic, peeled
  • 1 medium yellow onion, halved
  • 3 tablespoons extra virgin olive oil
  • 1 cup fresh basil, packed (divided)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon kosher salt (plus more to taste)
  • Freshly cracked black pepper
  • 1 cup vegetable broth (optional)
  • 1/2 cup heavy cream or coconut milk (optional)

Instructions

  1. Preheat grill to medium-high heat (375-400°F) or smoker to 275°F.
  2. Wash tomatoes and trim stems to make them flat. Leave tomatoes whole. Halve onions, leaving root end intact. Peel garlic cloves.
  3. Arrange tomatoes, onion halves, and garlic on baking sheets or grill baskets. Drizzle generously with olive oil and sprinkle with salt and pepper.
  4. Roast on the grill for 30-40 minutes, flipping halfway through, until tomatoes are blistered, charred, and soft, and onions are caramelized.
  5. Let tomatoes cool slightly. Transfer tomatoes, onions, garlic, balsamic vinegar, and half of the basil to a blender or pot.
  6. Blend until smooth. If using a countertop blender, do in batches and vent carefully.
  7. Pour blended soup into a large pot. Add vegetable broth if using. Simmer over medium-low heat for 10 minutes.
  8. Taste and adjust seasoning with salt and pepper. Stir in remaining fresh basil just before serving.
  9. Serve hot with crusty bread or biscuits.

Notes

For a silkier texture, strain the soup through a fine-mesh sieve after blending. If using a charcoal grill, use a chimney starter to avoid lighter fluid taste. Roma tomatoes are preferred for their meaty texture, but heirlooms work well too. The soup freezes well for up to 3 months.
