- 4–5 pounds plums (halved, pitted, and sliced)
- 2 tablespoons fresh lemon juice
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 2 tablespoons cornstarch
- 1/2 cup unsalted butter (cold and cubed)
- 1 cup all-purpose flour
- 1/2 cup coarse sugar (turbinado or demerara)
- 1 cup almonds (roughly chopped)
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or cast-iron skillet lightly with butter.
- Wash plums and slice into wedges. In a large bowl, toss plums with lemon juice, granulated sugar, cinnamon, cardamom, and cornstarch. Let sit for 15 minutes to draw out juices.
- In a medium bowl, whisk together flour, coarse sugar, salt, and chopped almonds. Add cold cubed butter and cut in using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized chunks. Stir in vanilla extract.
- Transfer the plum mixture to the prepared dish, pouring in any accumulated juices. Sprinkle the almond topping evenly over the plums.
- Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling vigorously. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
- Let the crumble cool for at least 20 minutes before serving to allow the filling to set. Serve warm with vanilla ice cream or whipped cream.
Notes
For extra flavor, toast the chopped almonds in a dry skillet for 2-3 minutes before adding to the topping. If using frozen plums, thaw and drain excess liquid first, adding an extra tablespoon of cornstarch if needed. Let the crumble cool completely to ensure the filling thickens properly. Store leftovers in an airtight container in the fridge for up to 3 days.
