Description
A creamy, refreshing frozen cocktail made with mango, lime, coconut cream, and mint. This easy-to-blend drink is perfect for summer parties and can be made alcoholic or as a kid-friendly mocktail.

- 2 cups (300g) frozen mango chunks
- 1/2 cup (120ml) fresh lime juice
- 1 can (400ml) coconut cream or full-fat coconut milk
- 1 cup (30g) fresh mint leaves, packed
- 1 cup (240ml) white rum
- 2–4 tablespoons (30-60ml) simple syrup
- 1 cup (150g) ice cubes
- Optional garnish: mint sprigs, lime wheels, grated lime zest
Instructions
- Wash limes and mint leaves. Cut limes in half and juice them. Strip mint leaves from stems.
- Add frozen mango chunks, lime juice, coconut cream, mint leaves, rum, and simple syrup to a high-speed blender.
- Blend on low speed to break up frozen fruit, then gradually increase to high. Blend for 30-60 seconds until smooth and creamy.
- Taste and adjust sweetness with more simple syrup or tartness with more lime juice. Add ice or water if the consistency is too thick or thin.
- Pour into chilled glasses and garnish with mint sprigs and lime wheels. Serve immediately.
Notes
For a mocktail version, omit the rum and replace with coconut water or soda water. Freeze lime halves overnight for extra coldness and flavor. Chill glasses before serving to maintain texture. The drink does not store well after blending as it melts quickly.
