Ingredients

  • 1 pound (450g) ground turkey (93% lean)
  • 1 large bag (1012 oz) sturdy tortilla chips
  • 2 cups (200g) shredded Mexican blend cheese
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 cup (240g) medium salsa
  • ½ cup sliced jalapeños
  • 3 stalks green onions, sliced
  • ½ cup sour cream
  • 1 ripe avocado, diced
  • ½ cup chopped cilantro
  • Hot sauce to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil.
  2. Chop onion, mince garlic, slice jalapeños and green onions. Drain and rinse beans and corn.
  3. Heat a large skillet over medium-high heat. Add ground turkey and diced onion. Brown the meat, breaking it up with a spoon, for about 8 minutes.
  4. Drain excess fat from the turkey. Stir in taco seasoning and 2-3 tablespoons of water. Add black beans and corn. Simmer for 2 minutes.
  5. Spread tortilla chips in a single layer on the prepared sheet pan.
  6. Pour the seasoned turkey mixture evenly over the chips.
  7. Sprinkle shredded cheese generously over the meat and chips.
  8. Bake for 5-7 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
  9. Remove from oven and immediately top with jalapeños, green onions, cilantro, avocado, sour cream, and hot sauce.
  10. Serve immediately while chips are crisp and cheese is gooey.

Notes

Do not overcrowd the pan to ensure chips stay crispy. Drain wet ingredients (beans, corn, salsa) thoroughly to prevent sogginess. Shred your own cheese for better melting. For leftovers, store in the fridge for up to 3 days and reheat in the oven at 350°F.
