  • 1/2 cup unsalted butter
  • 68 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 1 tablespoon flour (for thickening gravy)
  • 2 cups low-sodium beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1/2 cup heavy cream (optional but recommended)

Instructions

  1. Pat beef tips dry with paper towels. Toss in a bowl with 1/2 cup flour, salt, and pepper until lightly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear beef tips in a single layer (work in batches if necessary) for 2-3 minutes per side until golden brown. Remove beef to a plate, leaving fond in the pan.
  3. Reduce heat to medium. Add butter to the pan. Once melted and foaming, add sliced mushrooms. Cook for 4-5 minutes until browned and liquid has evaporated.
  4. Add minced garlic to mushrooms and cook for 30 seconds until fragrant. Sprinkle 1 tablespoon flour over the mixture and stir for 1 minute.
  5. Slowly pour in beef broth while whisking constantly to prevent lumps. Add Worcestershire sauce and thyme. Bring to a simmer.
  6. Simmer gravy for 3-4 minutes until it thickens enough to coat the back of a spoon. Stir in heavy cream if using.
  7. Return beef tips and any accumulated juices to the pan. Toss to coat in gravy and heat through for 1-2 minutes. Adjust seasoning with salt and pepper.
  8. Serve immediately over mashed potatoes or egg noodles.

Notes

Do not crowd the pan when searing beef to ensure a good crust. Cook mushrooms until all liquid has evaporated to prevent watery gravy. Use fresh garlic for best flavor. This recipe does not freeze well due to the dairy content; store in the refrigerator for up to 4 days. Reheat gently with a splash of milk or broth.
