Rich, chewy blondie bars made with nutty brown butter and topped with a sweet vanilla glaze. This one-bowl recipe is perfect for busy weeknights and yields a bakery-quality dessert.

- 1 cup (200g) light brown sugar, packed
- ½ cup (100g) granulated sugar
- 1 large egg, room temperature
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup (170g) chocolate chips
- 1 cup (120g) powdered sugar, for glaze
- 2–3 tablespoons heavy cream, for glaze
- ½ teaspoon vanilla extract, for glaze
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- Melt the butter in a microwave-safe bowl or saucepan. Brown the butter until it smells nutty and has small brown specks (about 3-5 minutes). Pour into a mixing bowl and let cool for 5 minutes.
- Whisk the brown butter, light brown sugar, and granulated sugar vigorously for 2 minutes until smooth and glossy.
- Add the egg, egg yolk, and vanilla extract. Whisk until combined.
- Sift the flour, baking powder, and salt into the wet mixture. Gently fold with a spatula until just combined; do not overmix.
- Fold in the chocolate chips.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes until edges are golden and center is set but slightly soft. A toothpick should come out with moist crumbs.
- Cool in the pan on a wire rack for at least 20 minutes.
- While bars cool, whisk powdered sugar, vanilla extract, and heavy cream to make a drizzle-able glaze.
- Once bars are completely cool, drizzle glaze over the top and let set for 10 minutes before cutting.
Notes
Do not rush the browning of the butter to avoid a bitter taste. Cool the bars completely before glazing to ensure the glaze sets properly. Do not overbake as blondies continue to cook in the hot pan. For gluten-free option, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and chocolate chips, and coconut cream for the glaze.
