  • ½ cup (100g) granulated sugar

  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (170g) chocolate chips
  • 1 cup (120g) powdered sugar, for glaze
  • 23 tablespoons heavy cream, for glaze
  • ½ teaspoon vanilla extract, for glaze

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. Melt the butter in a microwave-safe bowl or saucepan. Brown the butter until it smells nutty and has small brown specks (about 3-5 minutes). Pour into a mixing bowl and let cool for 5 minutes.
  3. Whisk the brown butter, light brown sugar, and granulated sugar vigorously for 2 minutes until smooth and glossy.
  4. Add the egg, egg yolk, and vanilla extract. Whisk until combined.
  5. Sift the flour, baking powder, and salt into the wet mixture. Gently fold with a spatula until just combined; do not overmix.
  6. Fold in the chocolate chips.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes until edges are golden and center is set but slightly soft. A toothpick should come out with moist crumbs.
  9. Cool in the pan on a wire rack for at least 20 minutes.
  10. While bars cool, whisk powdered sugar, vanilla extract, and heavy cream to make a drizzle-able glaze.
  11. Once bars are completely cool, drizzle glaze over the top and let set for 10 minutes before cutting.

Notes

Do not rush the browning of the butter to avoid a bitter taste. Cool the bars completely before glazing to ensure the glaze sets properly. Do not overbake as blondies continue to cook in the hot pan. For gluten-free option, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and chocolate chips, and coconut cream for the glaze.
