Gooey Apple Fritter Cinnamon Bread

  • Author: Lina
  • Total Time: 60 minutes
  • Yield: 12 servings 1x

Description

A quick, no-knead breakfast hack that tastes like an apple fritter. This easy cinnamon bread uses simple ingredients like white bread, apples, and cinnamon sugar to create a warm, gooey, and indulgent treat in under an hour.

Ingredients

Scale
  • 1 large loaf white bread (about 680g), sliced into 1-inch pieces
  • ½ cup (113g) unsalted butter, melted
  • 3 medium apples (approx. 450g), peeled and diced into ½-inch cubes
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • ¼ cup sugar + 1 teaspoon cinnamon (for topping)
  • Optional: Powdered sugar and milk for glaze

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and dice apples into ½-inch cubes. Toss with a squeeze of lemon juice if not baking immediately.
  3. In a small bowl, mix granulated sugar, brown sugar, cinnamon, and nutmeg until combined.
  4. Slice the bread into 1-inch thick pieces.
  5. Spread a thin layer of melted butter on the bottom of a 9×13 inch baking dish.
  6. Layer bread slices, sprinkling with the cinnamon sugar mix and scattering diced apples. Repeat layers (bread, butter, sugar, apples) 3-4 times, ending with a final slice of bread.
  7. Brush the top slice generously with remaining melted butter and sprinkle with the topping cinnamon sugar mixture.
  8. Bake for 40-45 minutes until the top is golden brown and apples are bubbling. Tent with foil if browning too quickly after 25 minutes.
  9. Cool for at least 10 minutes before slicing into squares. Drizzle with glaze if desired and serve warm.

Notes

Use day-old bread for best texture as it absorbs butter without getting mushy. A mix of tart (Granny Smith) and sweet (Fuji/Honeycrisp) apples provides the best flavor balance. For a vegan version, use vegan butter and maple syrup. Store leftovers in an airtight container at room temperature for 2 days or freeze for up to 3 months.
