Description
A quick, no-knead breakfast hack that tastes like an apple fritter. This easy cinnamon bread uses simple ingredients like white bread, apples, and cinnamon sugar to create a warm, gooey, and indulgent treat in under an hour.
Ingredients
- 1 large loaf white bread (about 680g), sliced into 1-inch pieces
- ½ cup (113g) unsalted butter, melted
- 3 medium apples (approx. 450g), peeled and diced into ½-inch cubes
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed brown sugar
- 2 teaspoons ground cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon vanilla extract
- ¼ cup sugar + 1 teaspoon cinnamon (for topping)
- Optional: Powdered sugar and milk for glaze
Instructions
- Preheat oven to 350°F (175°C).
- Peel and dice apples into ½-inch cubes. Toss with a squeeze of lemon juice if not baking immediately.
- In a small bowl, mix granulated sugar, brown sugar, cinnamon, and nutmeg until combined.
- Slice the bread into 1-inch thick pieces.
- Spread a thin layer of melted butter on the bottom of a 9×13 inch baking dish.
- Layer bread slices, sprinkling with the cinnamon sugar mix and scattering diced apples. Repeat layers (bread, butter, sugar, apples) 3-4 times, ending with a final slice of bread.
- Brush the top slice generously with remaining melted butter and sprinkle with the topping cinnamon sugar mixture.
- Bake for 40-45 minutes until the top is golden brown and apples are bubbling. Tent with foil if browning too quickly after 25 minutes.
- Cool for at least 10 minutes before slicing into squares. Drizzle with glaze if desired and serve warm.
Notes
Use day-old bread for best texture as it absorbs butter without getting mushy. A mix of tart (Granny Smith) and sweet (Fuji/Honeycrisp) apples provides the best flavor balance. For a vegan version, use vegan butter and maple syrup. Store leftovers in an airtight container at room temperature for 2 days or freeze for up to 3 months.
