Description
A simple and delicious side dish featuring whole ears of corn wrapped in crispy bacon and grilled, then slathered in a zesty chili-lime butter. This kid-approved recipe is perfect for summer gatherings and BBQs.
Ingredients
- 8–10 ears of fresh corn, husked and silk removed
- 12–16 slices thick-cut bacon
- Toothpicks, thin metal skewers, or kitchen twine
- ½ cup (115g) unsalted butter, softened
- 1 tablespoon fresh lime zest
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt (or to taste)
- ¼ cup crumbled Cotija cheese (optional)
- Chopped cilantro (optional)
Instructions
- Shuck the corn, removing all husks and silk. Rinse under cold water and pat completely dry with paper towels.
- Wrap each ear of corn with a slice of bacon, spiraling from top to bottom with slight overlap. Secure the end with a toothpick, skewer, or kitchen twine.
- Place wrapped corn on a baking sheet and refrigerate for 15 minutes to help the bacon set.
- In a small bowl, mix the softened butter, lime zest, lime juice, chili powder, cumin, garlic powder, and salt until smooth.
- Preheat grill to medium heat (375°F – 400°F). Create an indirect heat zone if possible.
- Place wrapped corn on the grill. Close the lid and grill for 15-20 minutes, turning every 5 minutes, until bacon is crispy and corn is tender.
- Remove corn from grill and place on a serving platter.
- While hot, slather each ear generously with the chili-lime butter.
- Sprinkle with crumbled Cotija cheese and chopped cilantro if desired. Serve immediately.
Notes
If using toothpicks, soak them in water for 10 minutes before use to prevent burning. If the bacon is browning too fast, move the corn to a cooler part of the grill. For oven baking, cook at 400°F for 25-30 minutes, turning halfway. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven at 350°F for 10 minutes to crisp the bacon.
