Description
A quick and elegant summer appetizer featuring sweet grilled peaches, salty prosciutto, fresh mozzarella, and peppery arugula on a garlic-infused flatbread, ready in just 15 minutes.

- 1 package (about 1 pound / 450g) flatbread dough
- 2 tablespoons (30ml) extra virgin olive oil
- 2 cloves garlic, minced
- 2 large ripe peaches, sliced into ¼-inch rounds
- 4 ounces (115g) prosciutto di Parma, thinly sliced
- 4 ounces (115g) fresh mozzarella cheese, torn into pieces
- 2 cups (60g) loosely packed fresh arugula
- 2 tablespoons (30ml) balsamic glaze
- 10–12 fresh basil leaves, torn
- Pinch of flaky sea salt
Instructions
- Preheat grill to medium-high heat (400°F / 200°C). Slice peaches into ¼-inch rounds and tear mozzarella into bite-sized pieces. Mix minced garlic with olive oil in a small bowl.
- Brush peach slices lightly with the garlic olive oil mixture. Grill peaches directly on grates for 1-2 minutes per side until charred and soft. Remove and set aside.
- Brush the top of the flatbread dough generously with the remaining garlic olive oil. Place on grill (using parchment paper if needed) and cook for 2-3 minutes until golden and charred. Flip and cook for another 1-2 minutes. Remove and place on a cutting board.
- While flatbread is hot, arrange grilled peach slices on top. Scatter torn mozzarella over the peaches to melt slightly.
- Drape prosciutto over the flatbread. Toss fresh arugula and torn basil leaves over everything; the residual heat will slightly wilt the greens.
- Drizzle with balsamic glaze in a zigzag pattern and sprinkle with flaky sea salt. Slice and serve immediately.
Notes
For best results, use ripe but firm peaches that yield slightly to pressure. If you don’t have a grill, use a stovetop grill pan or broil in the oven. Use flaky sea salt for texture and flavor bursts. This dish is best served warm immediately after assembly.
