  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ cup low-sodium chicken broth
  • 1 can (15oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • ½ cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Dice sweet potatoes, onion, and bell pepper. Mince garlic. Drain and rinse beans.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it into small crumbles with a spoon.
  3. Cook turkey until no longer pink, about 5-7 minutes. Drain excess grease if necessary.
  4. Add diced onions and sweet potatoes to the skillet. Stir to coat in turkey fat and cook for 3-4 minutes until onions soften.
  5. Add garlic, smoked paprika, cumin, and chili powder. Stir for 1 minute until fragrant.
  6. Pour in chicken broth, scraping up browned bits from the bottom of the pan.
  7. Add black beans and corn. Stir to combine.
  8. Reduce heat to medium-low, cover the skillet, and simmer for 15-20 minutes until sweet potatoes are tender.
  9. Remove from heat. Stir in fresh cilantro and squeeze lime juice over the top.
  10. Taste and adjust salt and pepper. Let cool completely before portioning into containers.

Notes

Ensure sweet potatoes are cut into uniform ½-inch cubes for even cooking. Cool the mixture completely before storing to prevent condensation and sogginess. If freezing, omit fresh cilantro and add it fresh upon reheating. For a vegetarian version, swap turkey for lentils or tofu and use vegetable broth.
