Ingredients

  • 1/2 cup (40g) Old-Fashioned Rolled Oats
  • 1/2 cup (115g) Cottage Cheese (full-fat, small-curd preferred)
  • 1/4 cup (60ml) Milk (almond, oat, or dairy)
  • 1 scoop (25-30g) Vanilla Protein Powder (optional)
  • 1 tablespoon Maple Syrup or Honey
  • 12 tablespoons Creamy Natural Peanut Butter
  • Pinch of Salt
  • Optional: Sliced bananas, cinnamon, or dark chocolate chips

Instructions

  1. Add oats, cottage cheese, milk, protein powder (if using), and sweetener to a large bowl.
  2. Vigorously stir and mash the cottage cheese into the mixture until smooth and creamy.
  3. Microwave on high for 45 seconds, then remove and stir well.
  4. Microwave for another 45 seconds until hot and thickened. Add a splash of milk if too dry.
  5. Drop a spoonful of peanut butter on top and gently swirl it into the oats to create ribbons.
  6. Top with bananas, cinnamon, or chocolate chips and serve immediately.

Notes

Blend or mash the cottage cheese thoroughly to avoid curds. Do not overcook or oats will become gummy. For meal prep, store dry ingredients in jars and add wet ingredients fresh each morning.
