A creamy, dairy-free iced latte made with homemade cinnamon dolce syrup and oat milk, offering cafe-quality taste at a fraction of the cost.

- 1/2 cup light brown sugar
- 1/2 cup water
- 1 tablespoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 pinch salt
- 2 cups oat milk (barista style recommended)
- 1 cup strong coffee (cooled)
- 1 cup ice cubes
- Cinnamon stick or extra ground cinnamon for garnish
- Optional: Maple syrup or honey for additional sweetness
Instructions
- Combine brown sugar, water, cinnamon, vanilla extract, and salt in a small saucepan over medium heat.
- Stir constantly with a whisk until the sugar is fully dissolved (about 2-3 minutes).
- Reduce heat to low and simmer for 5-7 minutes until the syrup thickens slightly and becomes fragrant.
- Remove from heat and let the syrup cool completely. Store in the fridge if making ahead.
- Brew 1 cup of strong coffee and let it cool slightly.
- Fill a tall glass or mason jar with ice cubes.
- Pour the cooled coffee over the ice.
- Add 2-3 tablespoons of the cooled cinnamon dolce syrup to the glass.
- Shake or froth the oat milk until light and airy.
- Pour the oat milk slowly over the coffee and syrup mixture.
- Garnish with a cinnamon stick or a dusting of ground cinnamon.
- Stir well before drinking and serve immediately.
Notes
Ensure the syrup is completely cool before adding to the iced latte to prevent melting the ice. Use barista-style oat milk for better texture and to prevent separation. The syrup can be stored in the fridge for up to 2 weeks.
