  • 8 oz full-fat block cream cheese, softened
  • 23 medium fresh jalapeños, finely chopped (seeds removed for mild heat)
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices thick-cut bacon, cooked crispy and crumbled
  • 1/2 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 2 stalks green onions, sliced
  • 2 tablespoons butter, melted
  • Salt and black pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper.
  2. Clean mushroom caps with a damp paper towel and pat dry. Remove stems using a small spoon or corer, creating a bowl shape. Place caps stem-side up on the baking sheet.
  3. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces.
  4. In a mixing bowl, combine softened cream cheese, shredded cheddar, minced garlic, and chopped jalapeños. Mix until smooth.
  5. Add crumbled bacon and sliced green onions to the cheese mixture. Taste and adjust seasoning with salt and pepper.
  6. Fill each mushroom cap with the mixture, packing it gently but leaving room at the top for the topping.
  7. Sprinkle panko breadcrumbs evenly over each stuffed mushroom. Drizzle melted butter over the tops.
  8. Bake for 15-20 minutes until mushrooms are tender and tops are golden brown and crispy. If browning too fast, cover loosely with foil.
  9. Optional: Broil for 1-2 minutes at the end for extra crispiness, watching closely to prevent burning.
  10. Remove from oven and let cool for 2-3 minutes. Garnish with fresh chives and serve hot.
