- 1 cup (100g) sharp cheddar cheese, shredded
- 8 oz (225g) cream cheese, softened to room temperature
- 1 cup (100g) crushed pork rinds (for coating)
- 1 tablespoon everything bagel seasoning (optional)
- 2 tablespoons butter, melted
Instructions
- Prep the sausage: If using pre-cooked links, remove casing and chop into small pieces. If using raw sausage, cook until browned, drain all grease, and let cool completely before chopping.
- Crush the coating: Place pork rinds in a zip-top bag and crush into fine crumbs using a rolling pin or heavy pan. Set aside.
- Mix the base: In a large mixing bowl, combine the softened cream cheese, shredded cheddar, and chopped sausage. Mix until evenly distributed and cohesive.
- Roll the balls: Take a tablespoon of the mixture and roll it into a ball between your palms. Place on a parchment-lined sheet.
- Coat the balls: Dip each ball into melted butter, then roll in the crushed pork rinds, pressing gently to adhere. Place back on the sheet.
- Chill or Bake: For soft balls, chill in the fridge for at least 30 minutes. For crispy balls, bake at 350°F (175°C) for 10-12 minutes until golden brown. Let cool for 5 minutes before serving.

Ensure cream cheese is softened to room temperature to avoid lumps. Drain and pat dry sausage thoroughly to prevent greasy balls. Can be made ahead and stored in the fridge for up to 5 days or frozen for up to 3 months.
