Never-Soggy Sausage and Egg Breakfast Casserole

  • Author: Lina
  • Total Time: 55 minutes
  • Yield: 8 servings 1x

Description

A comforting, make-ahead breakfast casserole that stays fluffy and never soggy. This self-care recipe features sharp cheddar, savory sausage, and a rich custard base, perfect for busy mornings or when you need a warm hug in dish form.

Ingredients

Scale
  • 6 cups day-old bread, cubed (about 300g)
  • 1 pound breakfast sausage (pork sage or turkey)
  • 2 cups sharp cheddar cheese, shredded (about 200g)
  • 8 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper

Instructions

  1. Prep the bread: Tear or cut bread into 1-inch cubes and let them sit out overnight or for several hours to dry out. If using fresh bread, toast at 300°F for 10 minutes.
  2. Cook the sausage: Heat a large skillet over medium heat. Brown the sausage, breaking it into crumbles. Drain excess grease if necessary.
  3. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  4. Layer the casserole: Spread half the bread in the dish, followed by half the sausage and half the cheese. Repeat with remaining bread, sausage, and cheese.
  5. Make the custard: In a large bowl, whisk eggs, heavy cream, milk, Worcestershire sauce, Dijon mustard, garlic powder, salt, and pepper until smooth and frothy.
  6. Pour and soak: Pour custard evenly over the layers. Press down gently to ensure all bread is submerged. Let sit for 10-15 minutes to absorb liquid.
  7. Bake: Place in preheated oven and bake for 35-40 minutes until golden, puffed, and set in the center.
  8. Rest and serve: Let the casserole rest for 10 minutes before slicing to allow it to set. Serve warm.

Notes

Day-old or dried bread is essential to prevent sogginess. Press the bread down into the custard to ensure even cooking. Sharp cheddar is recommended for flavor balance. Can be assembled the night before and refrigerated overnight before baking.
