- 1.5 lbs (680g) Cod Fillets
- 2 cups (300g) Cherry Tomatoes
- 4 tablespoons (60g) Unsalted Butter
- 4 cloves Garlic, minced
- 1 large Lemon (juice of half used in recipe, half for serving)
- 1 teaspoon Dried Parsley
- 1 tablespoon Extra Virgin Olive Oil
- Salt and Black Pepper to taste
- 1/2 teaspoon Red Pepper Flakes (optional)
- 2 cups Fresh Spinach (optional)
- 1 tablespoon Capers (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a 9×13 inch baking dish with parchment paper or lightly grease with olive oil.
- Pat cod fillets dry with paper towels and place them in the baking dish. Spread cherry tomatoes around the fish in a single layer.
- In a small bowl, melt the butter (microwave for 30 seconds). Whisk in minced garlic, lemon juice, olive oil, dried parsley, salt, pepper, and red pepper flakes.
- Drizzle the garlic butter sauce generously over the fish and tomatoes.
- Bake for 12-15 minutes, or until the fish flakes easily with a fork and tomatoes are burst and juicy.
- Remove from oven and let rest for 2 minutes before serving. Garnish with fresh parsley if desired.
Notes
Pat the fish dry to ensure proper roasting rather than steaming. Do not overcook the cod; it continues to cook after removal from the oven. The leftover garlic butter sauce is excellent for dipping bread or spooning over vegetables.
