  • 1.5 pounds ground beef (80/20 lean)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 cup beef broth (low-sodium)
  • 1 jar (16 oz) medium salsa
  • 1 packet (1 oz) taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 large avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 bag tortilla chips, crushed

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until beef is no longer pink and onion is soft. Drain excess fat.
  2. Transfer the browned beef and onions into a 6-quart slow cooker.
  3. Add the drained black beans, corn, Rotel tomatoes, beef broth, salsa, and taco seasoning to the slow cooker.
  4. Stir everything together until the seasoning is evenly distributed.
  5. Place the lid on the slow cooker and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  6. Taste the soup and adjust seasoning with salt or additional spice if needed.
  7. Ladle soup into bowls and top with shredded cheese, sour cream, diced avocado, fresh cilantro, and crushed tortilla chips. Serve immediately.
