A hearty, customizable, and easy-to-make slow cooker taco soup that is perfect for busy weeknights. It requires minimal prep time and offers a delicious, one-pot meal that freezes well.
Ingredients
- 1.5 pounds ground beef (80/20 lean)
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1 cup beef broth (low-sodium)
- 1 jar (16 oz) medium salsa
- 1 packet (1 oz) taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 large avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 bag tortilla chips, crushed
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the meat, until beef is no longer pink and onion is soft. Drain excess fat.
- Transfer the browned beef and onions into a 6-quart slow cooker.
- Add the drained black beans, corn, Rotel tomatoes, beef broth, salsa, and taco seasoning to the slow cooker.
- Stir everything together until the seasoning is evenly distributed.
- Place the lid on the slow cooker and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
- Taste the soup and adjust seasoning with salt or additional spice if needed.
- Ladle soup into bowls and top with shredded cheese, sour cream, diced avocado, fresh cilantro, and crushed tortilla chips. Serve immediately.
