- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Preheat oven to 450°F (230°C).
- Rinse mushrooms in a colander, then pat them completely dry with a towel.
- Trim tough stem ends. Quarter larger mushrooms; leave small ones whole.
- Place mushrooms in a large bowl.
- Add olive oil, minced garlic, dried thyme, salt, and black pepper.
- Toss thoroughly with hands to ensure even coating.
- Line a baking sheet with parchment paper.
- Spread mushrooms in a single layer, ensuring they are not crowded.
- Roast for 15-20 minutes, stirring or shaking the pan at the 10-minute mark.
- Roast until mushrooms are deeply browned, shriveled, and tender.
- Optional: Sprinkle Parmesan cheese over the mushrooms during the last 5 minutes of roasting.
- Let rest on the pan for 2 minutes before serving.
Notes
Do not crowd the pan, or the mushrooms will steam instead of roast. High heat (450°F) is crucial for browning. Wash mushrooms right before cooking to prevent sliminess. If using table salt, reduce amount by half.
