A forgiving, sturdy, and incredibly savory quiche that is perfect for busy mornings or weeknight dinners. It feeds a crowd, reheats well, and can be prepped ahead of time for maximum convenience.

- 1 box store-bought pie crust (2 crusts)
- 1 tablespoon butter (for greasing)
- 6 large eggs (room temperature)
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 small yellow onion, finely diced
- 1 cup diced cooked ham
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Dice ham, shred cheese, and chop onion.
- Heat a skillet over medium heat with butter or oil. Sauté diced onion for 3-4 minutes until soft and translucent. Add diced ham and cook for 2 more minutes. If using spinach, wilt it now. Remove from heat and let cool slightly.
- Roll out pie crust and press into a 9-inch pie dish. Trim edges and prick bottom with a fork. Grease dish well if making crustless.
- In a large mixing bowl, whisk together eggs, heavy cream, milk, Dijon mustard, garlic powder, thyme, salt, and pepper until smooth and slightly frothy.
- Spread the sautéed onion and ham mixture evenly over the bottom of the crust. Sprinkle shredded cheddar cheese on top.
- Slowly pour the egg mixture over the cheese and veggies. Ensure liquid covers ingredients but does not overflow.
- Place pie dish on a baking sheet and bake at 375°F (190°C) for 30-40 minutes. Edges should be set and golden brown; center should jiggle slightly like Jell-O.
- Let quiche rest for 10 minutes before slicing to allow custard to set fully. Slice into wedges and serve warm, at room temperature, or cold.
Notes
Excess moisture from veggies makes a soggy quiche, so always sauté onions and spinach first. Use room temperature eggs for even cooking. The center should jiggle slightly but not slosh when done. For a crustless version, grease the dish well and consider using a cast iron skillet.
