  • 1 large yellow onion, sliced into half-moons
  • 3 tablespoons olive oil
  • 2 tablespoons fajita seasoning (1 tsp cumin, 1 tsp chili powder, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper)
  • 2 limes (1 for juicing over raw ingredients, 1 for finishing)
  • Warm tortillas (flour or corn) for serving
  • Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with aluminum foil and spray lightly with oil.
  2. Cut chicken breasts into 1-inch strips and place in a large bowl.
  3. Slice bell peppers and onions into strips similar in width to the chicken and add to the bowl with the chicken.
  4. Drizzle olive oil and the juice of one lime over the chicken and veggies. Sprinkle with fajita seasoning. Toss until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in a single layer, ensuring pieces are not crowded.
  6. Bake for 20-25 minutes, stirring halfway through, until chicken reaches an internal temperature of 165°F and veggies are charred.
  7. Remove from oven and squeeze the juice of the second lime over the hot fajitas. Serve immediately with warm tortillas and toppings.

Notes

Do not crowd the pan; use two sheets if necessary to ensure veggies roast rather than steam. Let chicken rest for 5 minutes before serving to retain juices. Warm tortillas in a microwave or skillet before serving.
