- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch strips
- 3 medium bell peppers (red, yellow, green), sliced
- 1 large yellow onion, sliced into half-moons
- 3 tablespoons olive oil
- 2 tablespoons fajita seasoning (1 tsp cumin, 1 tsp chili powder, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper)
- 2 limes (1 for juicing over raw ingredients, 1 for finishing)
- Warm tortillas (flour or corn) for serving
- Optional toppings: sour cream, salsa, guacamole, fresh cilantro
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with aluminum foil and spray lightly with oil.
- Cut chicken breasts into 1-inch strips and place in a large bowl.
- Slice bell peppers and onions into strips similar in width to the chicken and add to the bowl with the chicken.
- Drizzle olive oil and the juice of one lime over the chicken and veggies. Sprinkle with fajita seasoning. Toss until everything is evenly coated.
- Spread the mixture onto the prepared baking sheet in a single layer, ensuring pieces are not crowded.
- Bake for 20-25 minutes, stirring halfway through, until chicken reaches an internal temperature of 165°F and veggies are charred.
- Remove from oven and squeeze the juice of the second lime over the hot fajitas. Serve immediately with warm tortillas and toppings.
Notes
Do not crowd the pan; use two sheets if necessary to ensure veggies roast rather than steam. Let chicken rest for 5 minutes before serving to retain juices. Warm tortillas in a microwave or skillet before serving.
