Ingredients
- 1.5 lbs Italian sausage (spicy or mild, whole links)
- 1.5 lbs red potatoes (small, cut into 1-inch cubes)
- 3 large bell peppers (mixed colors, sliced into strips)
- 1 large yellow onion (sliced into half-moons)
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic (minced)
- 1 tablespoon dried Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper (to taste)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon balsamic glaze
Instructions
- Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with parchment paper or grease lightly with olive oil.
- Wash and dry potatoes, then cut into 1-inch uniform cubes. Slice bell peppers into 1/2-inch strips and onion into half-moons.
- Prick sausage links with a fork to prevent bursting, then slice diagonally into 1/2-inch thick pieces.
- In a large bowl, combine potatoes, peppers, and onions. Drizzle with olive oil and sprinkle with Italian seasoning, red pepper flakes, salt, and pepper. Toss to coat evenly.
- Add the sliced sausage to the bowl and toss again to combine.
- Spread the mixture onto the prepared sheet pan in a single layer, ensuring ingredients are not crowded.
- Roast for 20-25 minutes. Halfway through (around 10-12 minutes), remove pan and stir or flip ingredients to ensure even browning.
- Remove pan from oven and sprinkle grated Parmesan cheese evenly over the top.
- Return to oven for 2-3 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
- Remove from oven, garnish with fresh chopped parsley, and drizzle with balsamic glaze before serving immediately.
Notes
Cut potatoes into small, uniform 1-inch cubes to ensure they cook at the same rate as the peppers. Do not crowd the pan; use two batches if necessary to avoid steaming. Prick sausage links before slicing to prevent bursting. Check that sausage reaches an internal temperature of 160°F. Leftovers store well in the fridge for up to 4 days but do not freeze well.
