  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper (to taste)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon balsamic glaze

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with parchment paper or grease lightly with olive oil.
  2. Wash and dry potatoes, then cut into 1-inch uniform cubes. Slice bell peppers into 1/2-inch strips and onion into half-moons.
  3. Prick sausage links with a fork to prevent bursting, then slice diagonally into 1/2-inch thick pieces.
  4. In a large bowl, combine potatoes, peppers, and onions. Drizzle with olive oil and sprinkle with Italian seasoning, red pepper flakes, salt, and pepper. Toss to coat evenly.
  5. Add the sliced sausage to the bowl and toss again to combine.
  6. Spread the mixture onto the prepared sheet pan in a single layer, ensuring ingredients are not crowded.
  7. Roast for 20-25 minutes. Halfway through (around 10-12 minutes), remove pan and stir or flip ingredients to ensure even browning.
  8. Remove pan from oven and sprinkle grated Parmesan cheese evenly over the top.
  9. Return to oven for 2-3 minutes until cheese is melted and bubbly. Watch closely to prevent burning.
  10. Remove from oven, garnish with fresh chopped parsley, and drizzle with balsamic glaze before serving immediately.

Notes

Cut potatoes into small, uniform 1-inch cubes to ensure they cook at the same rate as the peppers. Do not crowd the pan; use two batches if necessary to avoid steaming. Prick sausage links before slicing to prevent bursting. Check that sausage reaches an internal temperature of 160°F. Leftovers store well in the fridge for up to 4 days but do not freeze well.
