Ingredients
- 2 cups cooked chicken, shredded (about 300g)
- 8 oz cream cheese, softened and cut into cubes
- ½ cup ranch dressing
- ½ to 1 cup buffalo hot sauce (e.g., Frank’s RedHot)
- 1 cup sharp cheddar cheese, shredded
- 2–3 green onions, sliced (optional)
- 1 cup fresh spinach (optional)
- 2–3 tablespoons blue cheese dressing or crumbles (optional)
Instructions
- Prep the chicken: Shred cooked rotisserie chicken with two forks, discarding skin and bones. If cooking your own, poach breasts in broth until tender, then shred and cool slightly.
- Soften the cream cheese: Cut the block into small cubes to help it melt evenly. If needed, microwave for 15-20 seconds just to soften, not melt.
- Combine base ingredients: Add shredded chicken, softened cream cheese, ranch dressing, and hot sauce to a 3-4 quart slow cooker. Stir gently to combine. Add optional spinach or blue cheese now if using.
- Slow cook: Cover and cook on LOW for 2-3 hours, stirring once or twice halfway through, until the cream cheese is fully melted and the dip is bubbling. (Can cook on HIGH for 1.5-2 hours if needed).
- Add cheddar cheese: Stir in the shredded cheddar cheese. Cover and let sit for 5-10 minutes until melted and smooth. Stir again until thick and glossy.
- Serve: Turn slow cooker to WARM. Sprinkle with sliced green onions. Serve with tortilla chips, garlic biscuits, or eat directly from the pot.
Notes
Do not use raw chicken as it can become rubbery. Use block cream cheese, not spreadable tubs, to avoid a runny dip. Shred your own cheddar cheese to ensure smooth melting. Start with ½ cup hot sauce and adjust to taste. The dip is best served warm, not hot, to prevent cheese from seizing. Leftovers can be stored in the fridge for up to 3 days but do not freeze well due to dairy separation.
