  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil, chopped (optional)

Instructions

  1. Slice the sausage, peppers, and onion. Mince the garlic and measure spices.
  2. Heat olive oil in a large skillet over medium-high heat. Add onions and peppers, sautéing for 3-4 minutes until softened and slightly charred.
  3. Add the sliced sausage to the pan. Cook for 5 minutes, stirring occasionally, until browned and crispy on the edges.
  4. Add minced garlic, oregano, and red pepper flakes. Stir constantly for 1 minute until fragrant.
  5. Pour in the tomato sauce and stir to combine. Bring to a simmer, then reduce heat to medium-low.
  6. Simmer uncovered for 10 minutes, stirring occasionally, until the sauce thickens and flavors meld.
  7. Taste and adjust seasoning with salt and black pepper. Stir in fresh basil if using. Serve hot.

Notes

Use pre-smoked sausage for speed and flavor. If the sauce is too thin, simmer longer. Leftovers keep in the fridge for up to 4 days. Reheat with a splash of water or broth to prevent drying out. Serve over rice or with crusty bread.
