  • Author: Lina
  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Description

A quick, small-batch skillet nacho recipe featuring smoky chipotle beef, melted cheese, and black beans, designed for two servings to minimize waste and maximize flavor.

Ingredients

Scale
  • 8 oz ground beef (80/20 fat ratio)
  • 3 cups sturdy tortilla chips
  • 12 chipotle peppers in adobo sauce + 1 tbsp sauce
  • 1/2 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar and Monterey Jack cheese mix
  • 1/2 cup black beans, drained and rinsed
  • 2 tablespoons fresh cilantro, chopped
  • Optional toppings: sour cream, sliced jalapeños, diced tomatoes, avocado

Instructions

  1. Mash 1-2 chipotle peppers with 1 tablespoon of adobo sauce into a smooth paste.
  2. Heat a 10-inch skillet over medium-high heat. Add ground beef and diced onion, breaking up the beef with a spoon.
  3. Cook for 4-5 minutes until beef is browned and onion is soft. Drain excess grease if necessary.
  4. Stir in minced garlic and chipotle paste; cook for 1 minute until fragrant. Remove from heat.
  5. Preheat oven to 400°F (200°C).
  6. Layer half the tortilla chips, half the beef mixture, half the black beans, and half the cheese in the skillet.
  7. Repeat layers with remaining chips, beef, beans, and cheese, ensuring cheese covers the chips.
  8. Bake in the preheated oven for 5-8 minutes until cheese is bubbly and slightly golden.
  9. Remove from oven and let sit for 2 minutes to set.
  10. Garnish with fresh cilantro and optional toppings. Serve immediately.

Notes

Use sturdy, thick-cut tortilla chips to prevent sogginess. Shred your own cheese for better melting. Ensure beef and beans are well-drained to avoid watery nachos. This recipe does not freeze well; store leftovers in the fridge for up to 3 days and reheat in the oven to restore crispness.
