- ½ cup (113g) unsalted butter, softened
- 3–4 cups (360-480g) powdered sugar, sifted
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
- In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
- Add eggs one at a time, beating well after each addition. Stir in 2 teaspoons vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and 1 teaspoon salt.
- Gradually add dry ingredients to wet ingredients on low speed. Stop mixing as soon as flour disappears to avoid tough cookies.
- Fold in chocolate chips by hand.
- Divide dough evenly between prepared pans. Press out evenly to edges to about ½ inch thickness.
- Bake for 15-18 minutes until edges are golden brown and center is set but slightly soft. Rotate pans halfway through.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- While cookies cool, beat softened cream cheese and ½ cup butter until smooth.
- Add powdered sugar, 1 teaspoon vanilla, and ¼ teaspoon salt. Beat on low until combined, then increase speed until fluffy.
- Place one cookie layer on a serving plate. Spread a layer of frosting. Top with second cookie layer and spread remaining frosting over the top.
- Chill in fridge for 30 minutes before slicing for cleaner cuts.

Ensure all ingredients (butter, eggs, cream cheese) are at room temperature for best texture. Do not overbake; cookies will firm up as they cool. Sift powdered sugar to prevent gritty frosting. Chill the finished cake before serving for easier slicing.
