- 8 cups chicken stock (low-sodium)
- ½ cup miso paste (mix of red and white)
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon fresh ginger, grated
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 tablespoon chili paste (Gochujang)
- 4 large eggs
- 4 packages ramen noodles (fresh or dried)
- 2 green onions, thinly sliced
- 4 nori sheets, torn
- ½ cup bamboo shoots, sliced
- ½ cup soft tofu, cubed
- ½ cup corn kernels
Instructions
- Bring a medium saucepan of water to a boil. Gently lower eggs into the water and cook for exactly 6.5 minutes.
- Remove eggs with a slotted spoon and immediately place them in an ice bath to stop cooking. Once cool, peel the shells and set aside.
- While eggs cook, grate ginger, mince garlic, and slice green onions.
- In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sautéing for 1 minute until fragrant.
- Add chicken stock, soy sauce, red pepper flakes, and chili paste. Bring to a gentle simmer (do not boil).
- In a separate bowl, whisk miso paste with a small amount of hot broth to create a smooth paste. Pour back into the pot and stir gently.
- In a separate pot, bring water to a boil and cook ramen noodles according to package directions. Drain and rinse briefly with cold water.
- Place cooked noodles in bowls. Ladle hot broth over noodles.
- Add toppings: green onions, nori, bamboo shoots, tofu, corn, and sliced jammy eggs.
- Serve immediately while hot.
Notes
For the best jammy eggs, use a timer for exactly 6.5 minutes. Do not boil the broth after adding miso to prevent bitterness. Store broth separately from noodles to prevent sogginess. The broth can be frozen for up to 2 months.
