  • 1 lb (450g) ground beef (80/20 blend recommended)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 4 cups chicken broth (low-sodium)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1.5 cups (170g) cheddar cheese, shredded
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Optional: ½ cup frozen corn, 2 sliced green onions

Instructions

  1. Prep ingredients: Dice potatoes, mince garlic, and grate cheese.
  2. Heat butter in a large pot or Dutch oven over medium-high heat.
  3. Add ground beef and break it up with a spoon. Cook until browned, about 5 minutes. Drain excess grease if desired.
  4. Add diced onion to the beef and cook for 2-3 minutes until softened.
  5. Add minced garlic and cook for 1 minute, stirring constantly.
  6. Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  7. Add diced potatoes. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 10-15 minutes until potatoes are tender.
  9. Stir in heavy cream and sour cream. Simmer for 2 minutes to heat through.
  10. Remove pot from heat. Gradually stir in shredded cheddar cheese until melted and smooth.
  11. Season with salt and pepper to taste. Stir in dried parsley.
  12. Serve hot with crusty bread or crackers.

Notes

Grate your own cheese to avoid grainy texture caused by anti-caking agents in pre-shredded cheese. Always remove the pot from heat before adding cheese to prevent separation. This soup does not freeze well due to the dairy; store in the refrigerator for up to 4 days. Reheat gently with a splash of milk or broth.
