Description

Hearty, savory, protein-packed rolls made with whole wheat tortillas, creamy ranch, sharp cheddar, and crispy bacon. These pinwheels are perfect for tailgating, travel well, and are easy to make ahead.

  • 12 large round whole wheat tortillas (8-inch)
  • 8 oz full-fat cream cheese, softened
  • 1 packet (1 oz) ranch dressing mix (or 2 tbsp homemade ranch seasoning)
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices cooked bacon, crumbled
  • 4 stalks green onions, finely chopped
  • 1/2 teaspoon garlic powder

Instructions

  1. Cook the bacon until crispy, let it cool completely, and crumble into small pieces. Chop the green onions and shred the cheddar cheese. Soften the cream cheese by leaving it out for 15 minutes.
  2. In a large mixing bowl, combine the softened cream cheese, ranch dressing mix, garlic powder, and shredded cheddar cheese. Stir until well combined and smooth.
  3. Lay out one tortilla on a clean surface. Spread a thin, even layer of the cream cheese mixture over the entire tortilla, leaving a 1/2-inch border at the edges.
  4. Sprinkle half of the crumbled bacon and green onions evenly over the cream cheese layer. Repeat with the remaining tortillas and filling.
  5. Starting from the long edge, tightly roll each tortilla up into a log. Use plastic wrap to help tighten the roll and wrap each log tightly, twisting the ends to secure.
  6. Place the wrapped logs in the refrigerator for at least 2 hours, or overnight, to firm up the cream cheese.
  7. Remove the plastic wrap from the logs. Using a sharp serrated knife, cut each log into 1-inch slices. Arrange on a platter and serve chilled or at room temperature.

Notes

Chilling is crucial for clean slicing. Use a serrated knife to prevent squishing the filling. For a spicy version, add diced jalapeños. For a chicken version, add shredded cooked chicken. Gluten-free tortillas can be used for a GF version.
