Fluffy Blueberry Buttermilk Waffles

  • Author: Lina
  • Total Time: 20 minutes
  • Yield: 6 servings 1x

Description

Light, airy, and golden-brown waffles packed with bursts of tart blueberry flavor. This easy weeknight recipe uses buttermilk for tenderness and frozen berries for convenience, coming together in under 20 minutes.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • ½ teaspoon cinnamon
  • 1 ½ cups (360ml) buttermilk
  • 2 large eggs
  • ¼ cup (60g) melted unsalted butter
  • 1 teaspoon vanilla extract
  • 3 tablespoons sugar
  • 1 ½ cups frozen blueberries
  • Extra flour for dusting blueberries

Instructions

  1. Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a large bowl until no white streaks remain.
  2. In a separate medium bowl or large measuring cup, whisk the buttermilk, eggs, melted butter, vanilla, and sugar until smooth and uniform.
  3. Pour the wet mixture into the dry mixture and gently stir until just moistened. The batter should remain lumpy; do not overmix.
  4. Toss the frozen blueberries with a teaspoon of flour to coat them, then gently fold them into the batter.
  5. Preheat a waffle iron for 5 minutes and lightly grease it with butter or oil.
  6. Pour about ½ cup of batter onto the center of the iron. Close the lid and cook for 3-4 minutes until steam stops rising and waffles are golden brown and crispy.
  7. Transfer cooked waffles to a wire rack set over a baking sheet to keep them crisp. Serve immediately or keep warm in a 200°F (95°C) oven.

Notes

Do not thaw the blueberries before adding them to the batter, as this can make the waffles dense and purple. Do not overmix the batter; lumps are okay and ensure fluffy texture. Let the batter rest for 5-10 minutes if time permits for extra fluffiness. Grease the waffle iron between batches for best browning.
