Description

A quick, 5-minute prep after-school snack made by dipping frozen banana slices in chocolate and freezing them again. These bites offer a crisp chocolate shell with a creamy banana center, customizable with nuts, sea salt, or nut butter drizzles.

  • 4 large ripe bananas, peeled and sliced into ½-inch rounds
  • 1.5 cups (250g) semi-sweet chocolate chips
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon coconut oil
  • ½ cup crushed nuts (peanuts, almonds, or pistachios) – optional
  • Sea salt flakes – optional
  • ½ cup mini chocolate chips – optional
  • 2 tablespoons peanut butter or almond butter, melted – optional

Instructions

  1. Peel bananas and slice into ½-inch thick rounds. Arrange them in a single layer on a parchment-lined baking sheet, ensuring slices do not touch.
  2. Place the baking sheet in the freezer for 30 minutes until the bananas are rock hard.
  3. While bananas freeze, melt chocolate chips, cocoa powder, and coconut oil in a microwave-safe bowl. Microwave on high for 30 seconds, stir, then microwave in 15-second intervals, stirring until smooth and glossy.
  4. Remove bananas from the freezer. Working quickly in batches of 10, dip each slice into the melted chocolate using a fork.
  5. Lift the dipped banana, let excess chocolate drip off, and place back on the parchment-lined sheet.
  6. Immediately roll the wet chocolate-coated banana in crushed nuts, mini chocolate chips, or sprinkle with sea salt if desired.
  7. Return the sheet to the freezer for at least 2 hours until completely solid.
  8. Transfer frozen bites to an airtight container or ziplock bag for storage.
  9. To serve, let bites sit at room temperature for 2-3 minutes to soften slightly, then drizzle with melted nut butter if desired.

Notes

Use ripe, spotted bananas for the best sweetness and texture. Ensure bananas are completely frozen before dipping to prevent the chocolate from sliding off. Do not store in the refrigerator as the chocolate will sweat and become sticky. These can be stored in the freezer for up to 3 months.
