A warm, vinaigrette-soaked German potato salad with caramelized onions and bacon, designed as gentle comfort food that is easy to make and soothing to eat.

- 2 pounds Yukon Gold potatoes
- 6–8 slices thick-cut bacon
- 1 large yellow onion, diced
- 1/2 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1/2 cup water
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
- Fresh chives or parsley (optional, for garnish)
Instructions
- Wash potatoes and cut into 1-inch chunks. Place in a medium pot, cover with cold water by an inch, add a generous pinch of salt, and bring to a boil.
- Reduce heat to a simmer and cook potatoes for 15-20 minutes until fork-tender but not mushy. Drain in a colander and set aside to steam dry slightly.
- While potatoes boil, chop bacon and cook in a large skillet over medium heat until crispy and fat is rendered (5-7 minutes). Remove bacon with a slotted spoon, leaving the fat in the pan.
- Add diced onion to the hot bacon fat. Reduce heat to medium-low and cook slowly for 8-10 minutes until soft, golden, and caramelized. Add a splash of water if sticking occurs.
- In a small bowl, whisk together apple cider vinegar, brown sugar, Dijon mustard, salt, pepper, and water until sugar is dissolved.
- Pour the dressing mixture into the skillet with the onions and bacon fat. Simmer for 1 minute to meld flavors.
- Add the drained potatoes to the skillet and gently toss to coat. The potatoes will absorb the dressing. Taste and adjust seasoning if needed.
- Stir in the crispy bacon bits. Serve warm, optionally garnished with fresh chives or parsley.
Notes
Use Yukon Gold potatoes as they hold their shape better than russets. Do not overcook the potatoes or they will turn to mush. Reserve the bacon fat for frying the onions as it adds essential flavor. The salad tastes better the next day as flavors meld. Do not freeze as potatoes become grainy.
